The cold-pressed extra virgin avocado oil is made from ripe avocado fruits, which contains up to 30% oil (based on fresh weight) in the avocado mesocarp. To have optimal oil quality, avocado fruits used for cold-pressed oil production must have ideally ripeness, minimal rots and other postharvest disorders (such as flesh greying due to long storage).
