  • How does hydrogenation make palm oil a solid?
  • Hydrogenation turns oil from a liquid into a solid or semi-solid substance and makes the oil more stable: this is achieved by bonding a hydrogen atom with the double bonds of fatty acid chains. Hydrogenated palm oil is solid at room temperature and white in appearance. The oil is heated in a reactor, and mixed with Hydrogen and a nickel catalyst.
  • Can palm stearin and palm olein be hydrogenated?
  • Podmore (1987) states that palm stearin and palm olein can both be hydrogenated to give melting curves that can be used to produce low and high melting puff pastry margarine when blended with liquid oils. The use of palm oil products in the fats and oils industry has been reviewed by Berger (1986 ).
  • Does hydrogenation increase solid fat content of palm olein?
  • The solid fat content of palm oil ( Figure 4) increased progressively as hydrogenation time increased.   • What happens after hydrogenation of palm oil?
