Refinement is usually used to remove undesired components to improve coconut oil quality. In the present study, crude coconut oil (CCO) was refined in four stages: conventional degumming, neutralization, bleaching, and deodorization. Neutral oil loss seems to depend on both the crude oil quality and the process conditions during deodorization. The distillation of volatile glyceridic components (monoand diglycerides), originally present in the crude oil, was confirmed as the major cause for the neutral oil loss.
2.2. Oil Refining Process. Fifty grams of prepared oils was used for each experiment. Three oil refining procedures were respectively operated with the prepared degummed oil sample; thus the efficiency of individual steps for removing PAHs could be obtained and compared. Investigation of the effect of refining on the presence of targeted
Crude coconut oil was spiked with different MOAH standards, namely naphthalenes, alkylated naphthalenes, benzo(a)pyrene, and its alkylated homologues. Refining was modelled by deodorization at 230 °C, stripping with 10 kg/h of steam under 1 mbar vacuum for 3 h.

Composition of crude oils, hydration of ions and molecules, neutralization of organic acid, and separation and modification of products by centrifugation, adsorption, and vacuum steam distillation are briefly summarized.
